How to Shuck an Oyster

1. Wash each oyster thoroughly using fresh cold water and a kitchen brush. Especially scrub at the narrow hinge where sediments are often trapped.

2. Place oyster on a dish towl rounded side down and hold in place with one hand, preferably gloved.
3. Insert knife at hinge (narrow pointed end). With gentle force press down diagonally and twist knife slightly to pry open shell.

4. Slide knife blade along the inside of the top flat shell. Cut muscle, remove top flat shell and discard.
5. Slide knife blade under oyster meat to cut the muscle attaching the oyster to the bottom shell half.
The oyster should now be completely detached and sitting in the deep cupped half of the shell, ready to be eaten raw or prepared for cooking.
Relax! Shucking looks harder than it really is. With a little practice youÌll be a pro!
Oyster Storage and Handling Tips
Glidden Point cultured oysters are the freshest and finest that money can buy. When handled and stored properly, they can survive for months after harvest. We recommend that they be eaten within 2 weeks for best flavor.
Remember that oysters are live animals! They require the right balance of temperature, air and moisture to remain alive and edible. If not properly stored the oyster will weaken, its shell will open or gape, the meat will dry out, contaminants could enter, or it could die. NEVER eat a dead or gaping oyster.
Do÷
Store oysters at 33-40 degrees damp cold. In the back of the refrigerator covered with damp paper towels is fine, or on ice in a closed cooler allowing for drainage of melt-water.
Do Not÷
Store oysters in a sealed plastic bag or other airtight container.
Store oysters where they could freeze, or where temperatures will fluctuate widely or reach over 40 F.
NEVER! NEVER! NEVER!
Wet store oyster off of a dock, pier, boat, or in any body of water! Although it might seem a great idea initially, wet storage of Glidden Point Oysters in another body of water will diminish the flavor and quality of the oysters and may result in the oysters becoming contaminated with viruses or bacteria which could render you very ill or dead. We have raised Glidden Points in cold, clean, pristine water and have taken great care in our harvesting and handling practices to offer you the safest raw shellfish available anywhere.
